Fajita-Style Grilled Onions & Peppers

Ingredients

2 Cup mixed onions (white, red, scallions), sliced

2 Cup bell peppers, sliced

2-3 Jalapeños, sliced

2 Tbsp extra virgin olive oil

1 Tbsp fresh lime juice

1 Tbsp balsamic vinegar, optional

1 Tsp kosher salt

1/2 Tsp black pepper

1/2 Tsp garlic powder

1/2 Tsp onion powder

1/2 Tsp smoked paprika

1/2 Tsp chili powder

Instructions

1.Slice all onions and peppers into similar-sized strips.

2.Toss in a large bowl with olive oil, lime juice, balsamic vinegar, and all seasonings.

3.Grill over medium-high heat in a grill basket, tossing frequently, until charred on edges but still have some bite, about 12-15 minutes.
