Roasted Eggplant

Ingredients
●1 Large eggplant, sliced into rounds or half-moons
●1 Tbsp extra virgin olive oil
●1/2 Tsp kosher salt
●1/4 Tsp black pepper
●1/2 Tsp garlic powder
●1/4 Tsp onion powder
●1/4 Tsp smoked paprika
Instructions
1.Preheat oven to 425°f.
2.Slice eggplant into half-inch rounds or half-moons.
3.Lightly drizzle with olive oil and season with salt, pepper, garlic powder, onion powder, and paprika.
