Crispy Smashed Potatoes

Ingredients
●2 Lbs small potatoes (baby or fingerling)
●3 Tbsp extra virgin olive oil
●1 Tsp kosher salt
●1/2 Tsp black pepper
Instructions
1.Place small potatoes in a pot of salted water. bring to a boil and cook for about 20 minutes until fork-tender.
2.Drain and let cool slightly until you can handle them.
3.Place on a sheet pan and press each potato flat with the bottom of a cup to about half-inch thick.
