The Technique
●
Medium heat, a little butter or oil in the pan.
●
Crack the egg in and let it cook undisturbed.
●
The white should set completely while the yolk stays runny — that's the goal.
●
If you want the top set a little more, you can baste it with the hot butter using a spoon, or cover the pan with a lid for 30 seconds.
Where to Use It
●
Burgers, breakfast hashes, rice bowls, sandwiches, on top of avocado toast, on top of a steak — really anywhere you want a rich, runny yolk to act as a built-in sauce.

Once you start adding fried eggs to things, you won't stop.
Quick Tips
●
Medium heat — too hot and the edges burn before the white sets
●
Butter gives better flavor than oil for fried eggs
●
Don't flip if you want a runny yolk — baste or cover instead
●
Crack into a small bowl first to avoid shell fragments
