Jerk Chicken Thighs

Bone-in skin-on thighs marinated in jerk overnight. Spicy, sweet, and even better the next day.

Ingredients

  • 8 bone-in skin-on chicken thighs
  • Jerk marinade (see Playbook)
  • Olive oil

Assembly

  1. 1.Marinate chicken thighs in jerk marinade overnight in a zip-lock bag or covered dish in the fridge.
  2. 2.Preheat oven to 425°F.
  3. 3.Remove thighs from the marinade and place skin-side up on a sheet pan.
  4. 4.Roast for 35-40 minutes until the skin is crispy and caramelized and internal temp hits 165°F.
  5. 5.Serve whole, or shred for bowls, tacos, or rice plates.

The Story

Same oven method as the regular roasted thighs, but the jerk marinade takes them to another level. Marinate overnight and the flavors really penetrate the meat. The jerk caramelizes on the outside and gives you those dark, spicy, slightly sweet edges. You can eat these whole for dinner or shred them for bowls, tacos, or rice plates. They're actually better the next day — the jerk flavor intensifies overnight in the fridge, which makes them perfect for meal prep.
