Homemade Pizza

Pizza dough from your local shop, grilled to set the base, then topped however you want.

Ingredients

  • Fresh pizza dough (1-2 balls from a local pizza shop)
  • Olive oil
  • Marinara or pizza sauce
  • Shredded mozzarella cheese
  • Your choice of toppings
  • Kosher salt

Assembly

  1. 1.Let the dough come to room temperature if it's been refrigerated — about 30 minutes.
  2. 2.Stretch the dough out into your pizza shape. It's okay if it's not perfectly circular — just get it relatively even with a little crust around the edges.
  3. 3.Rub a thin layer of olive oil on one side of the dough.
  4. 4.Place the oiled side down on a hot grill or griddle. Let it cook for about a minute — you're just setting the shape so the dough can hold toppings.
  5. 5.Flip and optionally grill the other side briefly.
  6. 6.Remove from the grill. Add your sauce, cheese, and toppings.
  7. 7.Return to the grill (indirect heat with the lid closed) or transfer to an oven at 450-500°F.
  8. 8.Cook until the cheese is melted and bubbly and the crust is golden — about 8-12 minutes depending on heat.
  9. 9.Slice and serve.

The Story

My trick for homemade pizza is buying fresh dough from a local pizza shop — most places will sell you a ball for a couple bucks, and it's way better than store-bought packaged dough. The balls tend to be restaurant-sized, so keep that in mind for how much you need. I like to grill or griddle the dough first with a little olive oil — you're not trying to fully cook it, just set the shape so it can hold toppings without getting soggy. From there, top it however you want. My favorites are buffalo chicken, margherita, white pizza, or mushroom. The toppings are endless but the technique is the same.
