Full Breakfast Plate

Scrambled eggs, bacon, sausage, toast, and optional home fries. The full spread for a weekend morning.

Ingredients

  • 8 eggs (use only 6 yolks)
  • 8-12 strips bacon
  • 4 sausage links or patties
  • Bread, bagels, or English muffins for toast
  • Shredded cheese (optional, for eggs)
  • Kosher salt
  • Black pepper
  • Butter for eggs
  • Optional: 3-4 potatoes for home fries
  • Optional: 1/2 onion, diced (for home fries)
  • Olive oil (for potatoes)

Assembly

  1. 1.Preheat oven to 400°F. Line a sheet pan with foil and lay out the bacon strips. Put them in the oven and keep an eye on them — timing depends on thickness.
  2. 2.Start the sausage links in a pan over medium heat. Try to sear all four sides — by the time all sides are browned, the inside should be cooked through.
  3. 3.If making home fries: dice potatoes into small chunks. In a separate pan, cook diced onions with oil first, then add the potatoes. Let them get crispy.
  4. 4.Crack 8 eggs into a bowl, but only include 6 of the yolks — discard 2 yolks. Scramble with salt and pepper.
  5. 5.Cook the eggs last in a buttered pan over medium heat, stirring gently. Add cheese on top if desired.
  6. 6.Toast your bread, bagels, or English muffins.
  7. 7.Plate everything together and serve.

The Story

This is what I make when I'm cooking breakfast for friends or family. The trick with the eggs is to not use all the yolks — if I'm making eight eggs, I'll only use six yolks. It makes them a little healthier and I think gives the eggs a better consistency so the yolks don't overpower it. I start with the bacon in the oven and the sausage in a pan, then do potatoes if I'm making them, and the eggs go last since they cook fastest. Everything comes together at the same time and you've got a real breakfast.
