Chicken Caesar Wrap

Grilled chicken tossed in homemade Caesar dressing, wrapped with romaine and parmesan. Great for lunch on the go.

Ingredients

  • 1 lb chicken breast
  • Homemade Caesar dressing (see Playbook)
  • Large flour tortillas or wraps
  • Romaine lettuce, chopped
  • Grated parmesan cheese
  • Hot sauce (optional)
  • Olive oil
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Smoked paprika

Assembly

  1. 1.Season chicken breast with salt, pepper, garlic powder, onion powder, and smoked paprika. Cook in a pan with a little oil until almost done.
  2. 2.Chop the chicken into strips directly in the pan using a spatula or knife.
  3. 3.Add a generous amount of homemade Caesar dressing to the chicken in the pan. Toss and let it cook into the chicken for about a minute.
  4. 4.Remove from heat.
  5. 5.Lay out your wrap. Add chopped romaine lettuce, then the Caesar chicken, then parmesan cheese.
  6. 6.Add hot sauce if you want a kick.
  7. 7.Roll tightly, cut in half, and wrap in foil if taking it to go.

The Story

The trick that makes this wrap work is cooking the Caesar dressing directly into the chicken in the pan. Most people put dressing in the wrap and it becomes a soggy mess. Instead, I cook my chicken breast, chop it into strips right in the pan, then toss in the Caesar dressing and let it cook into the chicken for a minute. Every piece is coated and the wrap itself stays dry. I like mine with hot sauce for a kick — not traditional, but it works. Wrap them in foil and these are great on the go or for lunch prep.
