Breakfast Tacos
Homemade flour tortillas filled with butter-scrambled eggs, thick-cut bacon, and charred jalapeno salsa. Topped with cilantro.

Ingredients
- ●Homemade flour tortillas (see Playbook)
- ●4-6 eggs
- ●4-6 strips thick-cut bacon
- ●Butter for scrambled eggs
- ●Charred jalapeno salsa (see Playbook)
- ●Fresh cilantro
- ●Kosher salt
- ●Black pepper
Assembly
- 1.Make your homemade flour tortillas first — the dough needs time to rest. See the Playbook recipe for the full method.
- 2.Cook thick-cut bacon either in a pan or in the oven until crispy. Chop or break into pieces.
- 3.Scramble your eggs with salt and pepper in a buttered pan over medium heat. Use butter instead of oil — it makes a noticeable difference in flavor and richness.
- 4.Roll out and sear your tortillas in a hot cast iron pan — about 20 seconds per side.
- 5.Assemble: tortilla, scrambled eggs, bacon, a spoonful of charred jalapeno salsa, and a sprig of fresh cilantro on top.
- 6.Serve immediately while the tortillas are still warm.

“These are special because of the homemade flour tortillas — just flour, oil, and water, seared in cast iron for 20 seconds a side. They make a huge difference compared to store-bought. I fill them with butter-based scrambled eggs and thick-cut bacon, then top with my charred jalapeno salsa and a sprig of fresh cilantro. Simple, but when every component is made from scratch, they're really, really good.”
