Shrimp Cocktail

Poached shrimp with Old Bay, served cold with a two-ingredient cocktail sauce.

Ingredients

  • 1-2 lbs raw shrimp, peeled and deveined
  • Old Bay seasoning
  • Kosher salt
  • Ketchup
  • Prepared horseradish

Assembly

  1. 1.If shrimp are frozen, defrost them by running cool water over them in a colander until thawed.
  2. 2.Bring a large pot of water to a boil. Add salt and a generous amount of Old Bay seasoning.
  3. 3.Drop the shrimp in and cook for 2-3 minutes until they turn pink and curl up.
  4. 4.Remove the shrimp and run them under cold water in a colander to stop the cooking. You can also use an ice bath.
  5. 5.Mix the cocktail sauce: equal parts ketchup and prepared horseradish.
  6. 6.Serve the shrimp cold with the cocktail sauce on the side.

The Story

Buy raw shrimp for this — the texture is way better than pre-cooked. If they're frozen, just run them under cool water in a colander until they defrost. Poach them in salted water with Old Bay seasoning until they turn pink, then cool them down under cold water. The cocktail sauce is dead simple — half ketchup, half horseradish. You could add more ingredients but I don't think they do anything additional for you. Great appetizer or game day snack.
