Sausage, Peppers & Onions on a Roll

Bratwursts or Italian sausage seared on all sides, with charred peppers and onions on a club roll.

Ingredients

  • 4 bratwursts or Italian sausages
  • 2 bell peppers, sliced into thin strips
  • 1 large onion, sliced into thin strips
  • 4 club rolls or hoagie rolls
  • Olive oil
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Ketchup and/or mustard for serving

Assembly

  1. 1.Slice peppers and onions into thin strips. Cook in a pan or on a griddle with olive oil and season with salt, pepper, garlic powder, onion powder, and smoked paprika. Cook until they get some color and char.
  2. 2.Cook the sausages — sear on all four sides, rotating until each side has good color. By the time all sides are seared, the inside should be cooked through.
  3. 3.Assemble: onions and peppers on the base of the roll, sausage on top.
  4. 4.Serve with ketchup, mustard, or both — personal preference.

The Story

This works with bratwursts or Italian sausage — I'm not picky, I just grab whatever premium sausage looks good at the store. The key is getting a nice sear on all four sides of the sausage, which also cooks the inside through. The peppers and onions get the base five seasoning and some char at high heat for a little sweetness. Build it with onions and peppers on the base of the roll, sausage on top. Great for tailgates, cookouts, or anytime you want something different from burgers.
