Quesadillas
A crispy tortilla stuffed with double cheese, grilled onions, and your choice of protein. Served with sour cream and hot sauce.

Ingredients
- ●2 large flour tortillas (oversized if possible)
- ●Cooked chicken breast, diced (or steak, ground beef, etc.)
- ●Mexican blend shredded cheese
- ●1/2 onion, diced
- ●Olive oil
- ●Kosher salt
- ●Black pepper
- ●Garlic powder
- ●Onion powder
- ●Smoked paprika
- ●Cooking spray for the pan
- ●Sour cream and hot sauce for serving
- ●Optional: salsa, guacamole, ketchup (for steak version)
Assembly
- 1.Dice your onion and cook with olive oil and the base five seasoning until softened and lightly charred. You can add diced peppers too if you want.
- 2.Spray a large pan and get it decently hot.
- 3.Lay a tortilla flat in the pan. On one half, spread a layer of shredded cheese.
- 4.Top the cheese with your cooked onions and diced protein.
- 5.Add another layer of cheese on top of the fillings — the double cheese layer acts as glue.
- 6.Fold the tortilla over and move it toward the center of the pan.
- 7.Cook for about 3 minutes until the bottom is crispy and the cheese starts to melt.
- 8.Flip carefully and cook the other side for another 3 minutes.
- 9.Mix sour cream with hot sauce for a quick dipping sauce.
- 10.Slice into wedges and serve with the sauce, salsa, or guacamole.

The Story
“These are some of my favorites because you can fill them with anything. My go-to is chicken, but steak, ground beef, or even just cheese and vegetables work great. The key is the double cheese layer — cheese on the bottom, then your fillings, then more cheese on top before you fold. The cheese acts as glue holding everything together. Use oversized tortillas if you can find them, and make sure the pan is hot enough that the outside gets crispy. My favorite way to eat these is with a quick sauce — just mix sour cream with hot sauce. Best of both worlds.”
