Oven-Roasted Chicken Thighs

Bone-in skin-on chicken thighs with crispy skin and the base five seasoning. The ultimate meal prep protein.

Ingredients

  • 8 bone-in skin-on chicken thighs
  • Olive oil
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Smoked paprika

Assembly

  1. 1.Preheat oven to 425°F.
  2. 2.Pat chicken thighs dry with paper towels.
  3. 3.Drizzle with olive oil and season both sides generously with salt, pepper, garlic powder, onion powder, and smoked paprika. Don't be shy — season heavily.
  4. 4.Place skin-side up on a sheet pan.
  5. 5.Roast for 35-40 minutes until the skin is golden and crispy and internal temp hits 165°F.
  6. 6.For meal prep: let them cool slightly, then pull the skin off and portion the meat into containers. The seasoning will have cooked into the meat through the skin.

The Story

The key is cooking these with the skin on — the skin protects the meat and gets beautifully crispy in the oven. Season both sides generously with the base five, even under the skin if you can. For meal prep, I'll pull the skin off after cooking. Since you seasoned both sides, the meat underneath still has plenty of flavor even without the skin. Some of the seasoning cooks through the skin and into the meat while it roasts. Heavy seasoning is your friend here — don't be shy.
