Omelette

A classic omelette with ham or pancetta, peppers, onions, and cheddar cheese.

Ingredients

  • 3 eggs
  • 2-3 slices ham, diced (or pancetta or bacon)
  • 1/4 green pepper, finely diced
  • 1/4 white or yellow onion, finely diced
  • 1/4 Cup shredded cheddar cheese
  • Butter for the pan
  • Kosher salt
  • Black pepper

Assembly

  1. 1.Finely dice your onions and green peppers. Dice the ham (or pancetta or bacon) into small pieces.
  2. 2.In a pan over medium heat, cook the ham or pancetta first. Let the fat render out.
  3. 3.Add the diced peppers and onions. Cook until softened and the meat's juices have cooked into the vegetables.
  4. 4.Remove the filling from the pan and set aside.
  5. 5.Beat 3 eggs with salt and pepper. Pour into a buttered pan over medium heat.
  6. 6.Let the eggs set on the bottom, then gently push the edges in and tilt the pan to let uncooked egg flow to the edges.
  7. 7.When the eggs are mostly set but still slightly wet on top, add the filling to one half.
  8. 8.Top with shredded cheddar cheese. Fold the other half over and let it sit for 30 seconds to melt the cheese.
  9. 9.Slide onto a plate and serve.

The Story

My favorite omelette is what my local breakfast spot growing up called an Eastern omelette — ham, green peppers, and onions with cheese. The cheese is what makes it an Eastern versus a Western. I like cheddar, but use whatever cheese you prefer. You can swap the ham for pancetta or bacon — the pancetta especially adds a nice richness because the fat renders out and cooks into the vegetables. Dice the onions and peppers finely so they cook down quickly and distribute evenly through the omelette.
