Oklahoma Onion Smash Burgers
Thin smashed patties with caramelized onions pressed right into the meat. The best way to make a cheeseburger at home.

Ingredients
- ●2 lbs ground beef, 80/20
- ●1 large white or yellow onion, very thinly sliced
- ●8 slices American cheese
- ●4 brioche buns or potato rolls
- ●Kosher salt
- ●Black pepper
Assembly
- 1.Slice your onion as thinly as possible — a mandolin works great, but a knife is fine. Do all your prep before you start cooking.
- 2.Divide 2 lbs of ground beef (80/20) into 8 equal portions, about 4-5 oz each. Roll each into a loose ball — don't pack them tight.
- 3.Get your cast iron pan, stainless steel pan, or griddle screaming hot over high heat.
- 4.Place the beef balls in the pan and immediately top each one with a generous pile of raw sliced onions.
- 5.Using a sturdy spatula or burger press, smash each ball flat — press hard. You want these thin so they develop a serious crust. Season the top with salt and pepper.
- 6.Let them cook undisturbed for 2-3 minutes until the bottom develops a deep brown crust.
- 7.Flip each patty — the onions are now on the bottom, cooking into the meat. Immediately place one slice of American cheese on each patty.
- 8.Cook for another 2-3 minutes. Place your top bun on the cheese to warm it and help the cheese melt.
- 9.Stack two patties per bun on the bottom bun. Serve with burger sauce.

“This is my favorite type of cheeseburger. The onions get pressed into the patty and cook directly into the meat, so every bite has that sweet caramelized flavor. Two thin patties per burger, American cheese on each, stacked on a good bun. I don't even think these need lettuce and tomato — they stand on their own. Serve them with my burger sauce and you're set.”
