Mayo Chicken

Chicken breast baked with a mayo, breadcrumb, and parmesan crust. A childhood favorite that's surprisingly good.

Ingredients

  • 2 lbs chicken breast
  • 1/2 Cup mayonnaise
  • 1/3 Cup breadcrumbs
  • 1/4 Cup grated parmesan cheese
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Smoked paprika

Assembly

  1. 1.Preheat oven to 400-425°F.
  2. 2.Pound chicken breasts to an even thickness.
  3. 3.In a bowl, mix together the mayonnaise, breadcrumbs, parmesan cheese, and seasonings (salt, pepper, garlic powder, onion powder, smoked paprika).
  4. 4.Place the chicken breasts in a baking dish. Spread the mayo mixture generously on top of each breast.
  5. 5.Bake for about 30 minutes or until the chicken is cooked through and the topping is golden brown.
  6. 6.Serve as-is, or let it cool and use it as the base for chicken salad.

The Story

This is one of the things I ate most growing up and it's still in the rotation. The topping is a mix of mayo, breadcrumbs, parmesan cheese, and my base five seasoning. Spread it on top of a pounded chicken breast and bake it. The mayo keeps the chicken incredibly moist while the breadcrumbs and parmesan form a crispy, savory crust on top. It sounds simple because it is — and it's really good. This is also the base for my chicken salad recipe.
