Marinated Shrimp
Extra-large shrimp marinated in the fajita / chili lime marinade from the Playbook, then quickly grilled or pan-seared. Works on a salad, in a wrap, over rice, or straight off the skewer.

Ingredients
- ●1 lb extra-large or jumbo shrimp, peeled and deveined, tails on
- ●1 batch Fajita / Chili Lime Marinade (see Playbook)
- ●Skewers, if grilling (soak wooden skewers first)
- ●Lime wedges, for serving
- ●Fresh cilantro, chopped, for garnish (optional)
Assembly
- 1.Prepare the Fajita / Chili Lime Marinade from the Playbook.
- 2.Toss the shrimp in the marinade and let sit for 20-30 minutes — don't go longer than 30, or the acid will start breaking down the shrimp.
- 3.If grilling: thread the shrimp onto skewers. If using a pan or griddle, you can skip the skewers.
- 4.Preheat the grill or pan over high heat.
- 5.Cook the shrimp for about 2 minutes per side, until they turn pink and opaque. Don't overcook.
- 6.Finish with a squeeze of lime and chopped cilantro if using. Serve immediately.

The Story
“Get the biggest shrimp you can find — extra-large or jumbo — ideally peeled and deveined with tails on. Shrimp cooks fast, so the marinade is doing most of the flavor work. 20-30 minutes is ideal; any longer and the acid will start to cook the shrimp. Two minutes per side max, and you're done. Great on its own, over a Caesar or simple green salad, or tossed into a wrap.”
