Ingredients

  • 1.5 lbs ground beef
  • 1 Cup white or brown rice
  • 1 can black beans
  • 1 fresh lime
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Chili powder
  • Hard or soft taco shells
  • Toppings: lettuce, tomatoes, hot sauce, guacamole, salsa, sour cream, Mexican cheese, jalapenos, avocado

Assembly

  1. 1.Start your rice in a rice cooker — one part rice to one part water, with a squeeze of lime juice and a pinch of salt.
  2. 2.Heat a can of black beans in a small pot, then drain through a strainer.
  3. 3.Brown the ground beef in a pan over medium-high heat, breaking it up as it cooks.
  4. 4.If using 80/20 or fattier beef, drain the excess fat.
  5. 5.Season the beef with salt, pepper, garlic powder, onion powder, smoked paprika, and chili powder.
  6. 6.Set out your toppings: lettuce, tomatoes, hot sauce, guacamole, salsa, sour cream, Mexican cheese, jalapenos, onions — whatever you like.
  7. 7.Serve in hard or soft taco shells, or build a taco salad by piling everything on a plate and breaking a shell on top.

The Story

A favorite growing up and still a favorite now. The homemade taco seasoning is my base five spices plus chili powder — does a great job. You can do traditional tacos in hard or soft shells, or do what I used to do growing up and make taco salads — pile everything on a plate, break a shell on top, and go to town. Completely customizable with whatever toppings you like.
