Ingredients
- ●2 lbs chicken breast
- ●Olive oil
- ●Kosher salt
- ●Black pepper
- ●Garlic powder
- ●Onion powder
- ●Smoked paprika
Assembly
- 1.Pound your chicken breasts to an even thickness (about half an inch) or slice them in half lengthwise if they're thick. You want them relatively the same thickness all the way across so they cook evenly.
- 2.Lay all the chicken out on a cutting board or plate. Drizzle with a little olive oil.
- 3.Season one side with salt, pepper, garlic powder, onion powder, and smoked paprika. Flip them all over and season the other side.
- 4.Heat a pan, grill, or griddle over medium-high heat with a little oil.
- 5.Cook for about 4 minutes per side. Don't move them around — let them develop a nice sear.
- 6.Remove from heat. The chicken will still be hot and continue cooking, so don't worry about pulling them slightly early.
- 7.Let them rest for a few minutes before slicing or serving.
- 8.Serve as-is for dinner, chop for salads or wraps, or store for meal prep — they hold up great for several days.

The Story
“Most people think chicken breast has to be dry and flavorless. It doesn't. The key is getting them to an even thickness — either pound them out or slice them in half lengthwise — so they cook evenly. Season both sides before they hit the pan, don't overcook them, and let them rest when they come off. That's it. These are great for dinner, meal prep, salads, wraps, or just chopping up and eating with whatever. About the healthiest thing you can eat from a calories-per-protein standpoint.”
