Chicken Fajitas
Seasoned chicken with charred peppers and onions, served in tortillas or as a bowl with rice and beans.

Ingredients
- ●1.5-2 lbs chicken breast, sliced into thin strips
- ●3-4 bell peppers, sliced
- ●1 large white onion, sliced
- ●1 Cup white or brown rice
- ●1 can black beans
- ●1-2 fresh limes
- ●Kosher salt
- ●Black pepper
- ●Garlic powder
- ●Onion powder
- ●Smoked paprika
- ●Chili powder
- ●Olive oil or butter for rice
- ●Flour or corn tortillas (optional)
- ●Toppings: sour cream, salsa, hot sauce, guacamole, Mexican cheese, avocado
Assembly
- 1.Start your rice in a rice cooker — one part rice to one part water, with the juice of half a lime, a pinch of salt, and a small pat of butter or drizzle of olive oil.
- 2.Heat up a can of black beans in a small pot, then drain through a strainer to remove excess liquid.
- 3.Season chicken breast strips with salt, pepper, garlic powder, onion powder, smoked paprika, and chili powder. Season your sliced bell peppers and onions with the same blend.
- 4.Cook the chicken strips in a hot pan with a little oil — about 4 minutes per side until cooked through. Set aside.
- 5.In the same pan, cook the peppers and onions over high heat. Let them sit undisturbed until they get a nice char on the bottom, then toss and repeat.
- 6.Once the peppers and onions have good color, transfer them to a bowl — they'll steam themselves to completion.
- 7.Warm your tortillas in a dry pan for about 15 seconds per side.
- 8.Serve everything together — tortillas or bowls with rice, beans, chicken, and peppers and onions. Top with sour cream, salsa, hot sauce, guacamole, Mexican cheese, or jalapeno crema.

The trick with the peppers and onions is to let them get a real char before you start moving them around — once they've got that char, throw them in a bowl and they'll steam themselves to completion.
