Blueberry Banana Pancakes
Buttermilk pancakes with mashed banana in the batter and fresh blueberries pressed in as they cook.

Ingredients
- ●Buttermilk pancake mix (prepared according to package)
- ●1 ripe banana, mashed
- ●1 Cup fresh blueberries
- ●Butter for the griddle
- ●Maple syrup for serving
Assembly
- 1.Prepare buttermilk pancake mix according to package instructions.
- 2.Mash one ripe banana and mix it into the batter.
- 3.Heat a griddle to 375°F or a pan over medium heat. Lightly butter the surface.
- 4.Pour batter onto the griddle to form pancakes.
- 5.When bubbles start to appear on the surface, place blueberries one by one into each pancake.
- 6.Flip and cook the other side until golden brown.
- 7.Serve with maple syrup.

The Story
“I grew up eating blueberry banana pancakes and they're still my favorite. I start with buttermilk pancake mix — you can make your own from scratch if you want, but I've always just bought it. The banana gets mashed and mixed right into the batter, which gives every pancake a subtle sweetness and keeps them moist. The blueberries go in one by one when the bubbles start to appear, right before you flip. Served with maple syrup. You can absolutely substitute different fruits or skip the banana, but this is my go-to.”
