Beef and Broccoli
Thinly sliced beef and charred broccoli in a glossy soy-honey sauce, served over rice.

Ingredients
- ●1.5 lbs flank steak or sirloin, sliced thin against the grain
- ●3-4 Cup broccoli florets
- ●3 tbsp soy sauce
- ●1 tbsp honey
- ●2 cloves garlic, minced
- ●1 tsp toasted sesame oil
- ●1 tbsp cornstarch mixed with 2 tbsp water
- ●Olive oil for cooking
- ●Rice for serving
- ●Crushed red pepper flakes (optional)
- ●Kosher salt
- ●Black pepper
Assembly
- 1.Start your rice in a rice cooker.
- 2.Slice the beef thin against the grain into strips. Season with salt and pepper.
- 3.Mix the sauce: soy sauce, honey, garlic, and sesame oil. In a separate small dish, mix the cornstarch with water.
- 4.Heat a pan or wok over high heat with a little oil. Sear the beef in batches — don't crowd the pan. Get good color on it. Remove and set aside.
- 5.In the same pan, cook the broccoli over high heat. You want some char but the broccoli should still have bite.
- 6.Add the beef back to the pan with the broccoli.
- 7.Pour the sauce over everything and toss to coat.
- 8.Add the cornstarch mixture and stir — the sauce will thicken and become glossy within about a minute.
- 9.Serve over rice with red pepper flakes if you want heat.
